Incredible Indies: The Heart Cut, February 2025 Box
The Heart Cut #01 Stauning Distillery
Situated on the rugged West Coast of Denmark, Stauning Distillery is at the forefront of the New Nordic Whisky movement. Sweet meets smoky in perfect balance in this heather smoked single malt finished in a Madeira cask. Think beach bonfires, sticky toffee pudding, and a hint of BBQ sauce. Mouthwatering.
Tasting notes
Close your eyes, and on first sip picture yourself sitting on a sand dune overlooking the stunning, rugged Danish coast; sea spray being lifted by the wind, the remnants of last night’s beach bonfire not far away…and then the rich, comforting flavour of warm, slightly spiced sticky toffee pudding to finish. Perfect for cozy nights.
The Heart Cut #04 M&H Distillery
Sherry cask lovers, meet your new favourite! Founded by a group of whisky enthusiasts who wanted to showcase the best of their home country in a glass, M&H Distillery was built 10 years ago in the heart of Tel Aviv, Israel. Fully matured in a Pomegranate Wine cask, this dram blew Dram Team founder Chris away when he sampled it at a tasting last year. Truly a non-sherry sherry bomb for the ages!
Tasting notes:
You know the rich, fruity character you get from a Sherry cask whisky. Turn that up to 11 and layer on fresh pomegranate, baked plums, medjool dates, salted caramel, cherry pie and a thick, unctuous mouthfeel. Then you’re halfway there with this whisky.
The Heart Cut #05 FEW Spirits
Tucked away down an alley in the Chicago suburb of Evanston, you’ll find FEW Spirits, a grain-to-glass distillery making whiskey and gin since 2011. This Rye Whiskey, finished for 3 years in a Sauternes cask, is like a warm ray of sunshine through the window on a cold day. Sure to bring a smile to any American whiskey fan. Here at The Dram Team, we love rye AND we love Sauternes finishes, so this is definitely our jam!
Tasting notes:
If you’re into synaesthesia, this whiskey is all about ORANGE! Orange almond polenta cake, lemon drops, apricots, peach iced tea (a really great home-made one), hot buttered crumpets with lashings of butter, lemon drizzle cake and a touch of spice.
The Heart Cut #06 Cotswolds Distillery
Nestled in the heart of the English Countryside, the Cotswolds Distillery crafts outstanding natural spirits, inspired by the natural beauty of the area. This English whisky gem is a seriously elegant contender. Classic, fruity and refined, it’s pure deliciousness. Move over Speyside!
Tasting notes:
We weren’t kidding when we said this cask was elegant, fruity and creamy. Panna cotta and crème brûlée, toasted banana bread and crisp red apples, and candied pecans with a hint of lemon zest to finish - this whisky will put a smile on anyone’s face.
The Heart Cut #08 St. George Spirits
Wild doesn't even begin to explain it. American Whiskey, reimagined. Prepare to be amazed by this complex, one-of-a-kind cask from St. George Spirits in California. It’s deliciously unforgettable. Adventurousness is next to fearlessness, and the team at St. George skirts the line between the two - and if there were ever a cask to epitomise this ethos, this would be it. From a production standpoint, it’s absolutely unique - an unprecedented combination of malted barley and both hops and bay added as hot-side aroma additions during brewing.
Tasting notes:
Delicate notes of dried chamomile, ripe stone fruit and juicy mango lead the way, followed by a rich burst of apricot jam. The finish is all toasted brioche and the creamy, caramel-chocolate goodness of Rolo’s.
Cotswolds Distillery Cask #491, Heart Cut Exclusive
We had an unusual challenge curating this set: The Heart Cut's range doesn't extend into dream "Sixth Dram" pricing territory, so we had to get creative. Georgie & Fab pulled some strings with their good friends at the Cotswolds Distillery, who kindly arranged a never-tasted-before, not-available-anywhere cask sample especially for you! This is very likely the oldest liquid you'll ever have experienced from the Cotswolds Distillery, as Cask #491 - an American Oak Pedro Ximénez Butt - was filled on 1st January 2016 - making this a legitimate 8 year old single malt. This is a very exclusive and special treat: one to be savoured.
